All shiny Pokemon except the Neo Destiny, Neo Revelation, Shining Legends, and Shining Mew promo. You could also include gold star cards in there if you determine that the star is a shiny indicator.
All other manifestations of shinies, from DPT reverses, BW ultra rares, AOR secrets, Breakpoint Gyarados, Steam Siege M Gardevoir, Hidden Fates Shiny Vault, and SWSH secrets, have no indicators that the cards are shiny.
Here’s a list of all shiny Pokemon cards, including those without any indicator. They have missed at least one card though, the Red Gyarados from HeartGold & SoulSilver
All 27 of the EX-era gold stars are shiny versions. Mudkip looks the least because it is underwater but his tail is a clear giveaway, plus the fact that all of the rest are.
But that’s indeed the list I usually use for shiny Pokémon cards as well.
I also mention some cards that were also posted above (like the Machamp and Espeon) in the Unofficial sections per generation of my National Index collection thread. Still have to add a bunch though, including the Venusaur above (thanks @missingno).
And partially off-topic, but here is a list of all shiny Pokémon sprites in case people are curious about the color differences: pokemondb.net/pokedex/shiny
Skyridge Rhydon is another not so obvious shiny card. In generation 2 games the regular version was black but shiny Pokemon was given light grey colour.
As the OP specified, it does not indicate in the name of the card that the Pokemon is shiny. Stuff like “Shining Gyarados” makes it clear that the card is shiny, but almost all other shiny cards do not have this indicator. Gold star cards also indicate in the card name that the Pokemon is shiny. Obviously there are tons of cards where it’s clear that the Pokemon is shiny, many have flavor text or sparkles in the artwork but this is not indicated in the card name.
