I don’t play the tcg. I just like shiny cardboard. Energies are usually very lame but sometimes I like the patterns (hesitate to call it “art” but maybe I could be convinced)
Anyway here’s my 4 favorites. Especially like the jelly bean DNA 
of the retro energy skyridge

The Champion Double Colorless Energy from Evolutions are pretty cool. The only energy trophy card!!!

there are a few that I like when they are reverse holo but as far as the ones that I like the design non holo it was a lot more limited. For example the deoxys ones look good as reverse but not as regular
Oh yes, if I had to exclude holos and reverses I admit my difficulties.
I would say these are my favorites, but it’s more like a lukewarm, mild enjoyment lol
I loved looking at @credits energy collection when they were posting. So many cool looking arts.
The 2002 McDonald’s Pokémon-e Minimum Pack ones tick all the boxes for me:

It always pissed me off that I couldn’t use those energies in official tournaments lol
All of the HeartGold SoulSilver energies. Super unique to have the pokemon in them with a location also.
The regular energies that just have Cosmos or Neo Cosmos or whatever holo on them are great. There’s just something about holo taking up that much space. I like the recent ones from 151 and the older ones pictured here.
I’ve always liked this one as well. Green is my favorite color, and it looks great with the gold mixed in. 
If only they made the Rainbow and Golden Rare cards similar to this: regular colors, with rainbow/gold mixed in, instead of just having the entire card a single rainbow/gold color.
As for some of my own favorite Energy cards, the HGSS ones posted by @lyleberr are awesome for sure.
I also really like RH Energy cards from Asian countries (e.g. Korean). The RH goes hard on them. Here a picture so you know what I mean, although it’s a very bad (and old) picture and doesn’t do them justice at all. The picture is primarily meant so you know which Energy cards I’m talking about:
I also kinda like Energy cards with unique stamps, even if they’re unofficial. Like the Y2K stamped Base Set Energies:

Too bad our two biggest Energy collectors, @credits and @risingtrout aren’t active anymore. I’ve always liked their collection goals and seeing their updates with random new acquired Energy cards.
And @thefiercestorm with all the misprinted Energy cards were amazing to see as well.

While these are the League versions, the HGSS energies are really cool for their unique designs.
I also like Bounce energy. IDK why. It’s always looked really cool to me.
Shiny holo energies are almost always great. These modern Unit Energies popped into my mind for non-holo energies. The color combinations look really nice to me (especially the Metal/Psychic/Lightning and the Fighting/Dark/Fairy).
My partner wants to go down the energy card rabbit hole!!!
